I always put fresh cilantro in my chili or anything that has a southwestern flavor. My husband always puts it in his salsa.
I realized the other day that I put garlic and fresh flat leaf parsley and olive oil in almost everything. And I mean everything.
Pretty soon I'm gonna BE a garlic!
ok here is my easiest yummiest recipe for winter comfort food.
If you make it...you will love it...AND its one of the very few foods I will eat as a left over...
I learned it from my mother in law...its basically a crustless Shepherds Pie made easy.
She calls it Betty's Cassarole (we have no idea who Betty is...for all I know she got this recipe from a box top...but dang its good!)
-1 to 1 1/2 lbs ground beef/chicken/turkey or whatever
-1 lb bag of frozen mixed veggies partially thawed (carrots/corn/peas/green beans)
-1 jar or can of beef flavored prepared gravy. I use the Heinz low fat Savory Beef gravy
-mashed potatos (I have no idea how much I make...I just make a big pot so I have some extra for left over...and I make em with lots of butter/sour cream/salt & pepper and fresh minced parsley)
-a few cloves of garlic minced
-a small onion or shallot chopped
-handful of shredded cheddar or colby cheese
-preheat oven to 350
-Brown the ground meat with the garlic and onion while the potatos are cooking. Drain off any grease (use ground turkey or chicken and have no grease!)
-dump in the gravy and mix it up with the meat
-layer the meat mixture in an oven proof cassarole dish
-layer the veggies over the meat
-mash the potatos and layer that over the meat/veg
-sprinkle the cheese on top
-bake for about a half an hour (you're just really heating it thru since its already cooked)
If you are one of those people that likes to mix your veggies up in your mashed potatos, then this dish is for you!
